What each type needs, physically
UHT processing means the product is shelf-stable at ambient temperature until opened, giving a longer shelf life than pasteurised milk. Pasteurised milk, by contrast, requires chilled storage throughout -- every carton needs fridge/chiller space from the moment it's delivered, not just once it's opened.
Planning ambient shelf space for UHT
Because UHT stays shelf-stable at ambient temperature until opened, unopened cartons can be bought ahead and held on a dry shelf or rack area, separate from food-prep chiller space -- no chiller capacity is used until a carton is opened for daily use. That makes it practical to keep a buffer of UHT stock on hand without eating into the chiller space that pasteurised milk and other perishables need.
Planning chiller capacity for pasteurised milk
Every pasteurised carton needs chilled space from the moment it's delivered, so the size of a pasteurised order is a direct chiller-capacity constraint, not just a shopping-list quantity -- it's worth sizing an order to what you can actually fit and hold chilled at once, rather than only to what you expect to sell before spoilage.
